The Calamansi, is a fruit tree in the family Rutaceae, commonly called as calamondin, golden lime, panama orange, chinese orange, acid orange. It is believed originally from China and has spread throughout Southeast Asia, India, Hawaii, West Indies, Central and North America. In the Philippines, it is extensively used not just in Philippine cuisine, but also for household and medicinal use like as a hair conditioner, body deodorant, ink stain remover on fabrics, for treating insect bites, for curing skin problems like acne, as a cough remedy, etc.

Native to China, where it grows wild, Yuzu was introduced, during the Tang dynasty, to Japan and Korea ; countries where it is now most commonly cultivated. Larger and with a rougher skin, this close relation of the lime is similar to a small grapefruit. Its colour can vary between green and yellow according to how ripe it is and its taste can be defined as a mix between citron, grapefruit and mandarin. Highly resistant to the cold, probably as a result of its ascendant “Citrus ichangesis”, enabling it to grow in regions where the temperature drops as far as -5°C in winter, where other citrus fruits wouldn’t survive. Due largely to its high Vitamin C content, the Yuzu is considered to be a medicinal food in Japan, where it is used as much in cooking as in the bath with the onset of winter... whilst it can be found in France in gastronomy and beauty products
