Day 1: Monday, August 27 2018
You will spend time in the kitchen of l’École Valrhona Tokyo with Chef Fabrice David learning and practicing the Japonesque interpretation of French pastry with Japanese ingredients.
Day 2: Tuesday, August 28 2018
Discover Tokyo’s Kappabashi Street, known as ‘the kingdom of chefs’. Explore Asakusa to see the historic Sensoji Temple. You will also visit the legendary confectioner, Mizukami-San for a demonstration of traditional Japanese pastry.
Day 3: Wednesday, August 29 2018
Tour the most famous pastry and chocolate shops in Tokyo, including those who brought French pastry to Japan:
• Belvadere Pastry Shop
• Aigre Douce Pastry Shop: Chef Norihiko Terai, Relais Desserts
• Isetan Shops: Sadaharu Aoki, Sébastien Bouillet, Pierre Hermé, and more
You will then return to l’École Tokyo to create dishes based on the Japonesque techniques you discover.
Day 4: Thursday, August 30 2018
Explore the famous Tsukiji Market, the largest market in Japan dating to the Edo Period. Board the train for Kyoto, stopping in Aichi at a tea estate to explore the many varieties and secrets of tea.
Day 5: Friday, August 31 2018
Explore the culture of Kyoto, the center of traditional Japanese culture. You will visit famous Zen temple Kinkakuji, the sesame oil manufacturer Yamada Seiyu, the Buddhist temple Eikando Zenrinji as well as the historic mountain temple Kiyomizudera and take a walk around Gion, the famous geisha district.
