Meet the UK Pastry Team

Classic Fine Foods is very proud to be sponsor of the UK Pastry Team for La Coupe du Monde de la Pâtisserie 2019. The bi-annual most prestigious pastry competition in the world will celebrate its 30th anniversary in 2019.

The final will take place on the 27th & 28th of January 2019 at the Sirha exhibition in Lyon where 22 countries will compete for the title.

As the UK Pastry Team ranked among the top five teams in the three last final, they will reach automatically the final without having to prove their worth through the continental selection events. The other countries in the top five are: Italy, Japan, South Korea and the United States.

UK Pastry Team 2019:

Jamie HOUGHTON for the Sugar Category and Team Captain – Pastry Sous Chef at Belmond Le Manoir aux Quat’saisons

Jamie was a Mentee in the UK Pastry Team for the 2013 and 2015 Coupes du Monde and he has also participated in several pastry competitions in UK and in France. He was the winner of the UK Pastry Open at the Restaurant Show in October 2017. After started as a commis in Pastry at Belmond le Manoir aux Quat’Saisons he has been working there for more than four years now and is currently Benoit Blin’s Junior Sous-Chef.

 

Sarju RANAVAYA for the Chocolate Category – Assistant Pastry Chef at TheTasteLab by Classic Fine Foods UK

Graduated from the renowned culinary school Le Cordon Bleu, Sarju has worked at several luxury hotels including The Berkeley, The Langham and Brown’s Hotel before joining the team at TheTasteLab by Classic Fine Foods. Last October he won the best chocolate showpiece at the UK Pastry Open.

 

Chris SEDDON for the Ice Category – Pastry Chef at Coutts Bank

Chris was a reserve member of the UK Pastry Team for the 2017 edition and has a lot of experiences working with talented Pastry Chefs. He has worked for a number of years on some of London’s high-class hotels, such as Claridges, The Savoy and The Connaught to name but a few.

 

The UK Pastry Team will be coached by Denis Dramé Pastry Chef at TheTasteLab by Classic Fine Foods UK

The reserve candidates for 2019 are Nicolas Houchet (Reserve Sugar), Deputy Head of Pâtisserie at Le Cordon Bleu London, Mickael Ho Lam Kwan (Reserve Chocolate), Head Pastry Chef at Duddells and Jonas Plangger (Reserve Ice), Head Pastry Chef at Coworth Park Hotel in Ascot. The mentees who will be training alongside the team are Charles Liets, Graf Kwok and Miranda Reci.
